The origin of sushi is said to be in the “culture of fermenting and preserving fish” in Southeast Asia.
It was introduced to Japan around the Nara period and was initially a fermented food called “narezushi”.
In the Edo period, the prototype of today’s sushi using vinegared rice, “Hayazushi”, was born.
In particular, Edomae nigiri sushi has gained popularity as a fast food that can be easily eaten at street food stalls and has spread to the world.

日本には奈良時代頃に伝わり、当初は「なれずし」と呼ばれる発酵食品でした。

Pressed sushi(押し寿司)

Sushi made by packing vinegared rice and ingredients into a mold and pressing it firmly. Battera and hakozushi are famous types.

酢飯と具材を型に詰めて固めて作る寿司。バッテラや箱寿司などが有名。

Inari sushi(いなり寿司)

Sushi made by stuffing sweetly simmered fried tofu with vinegared rice. It has a gentle flavor.

甘く煮た油揚げを酢飯で包んだお寿司。優しい味わいです。
